Pumpkin Cookies

OK all of you cycling fans and health nuts out there! Here is something you just have to try.

Every once in a while you stumble on that must have recipe.  I make these cookies and take them everywhere and have always gotten good reviews.  Here it is by popular demand!

This is a great recipe if you are Vegan, Whole Food Plant Based, Vegetarian or gluten intolerant.  Sometimes I eat these cookies/bars for breakfast.  They are also great for taking cycling as fuel or as a recovery food afterwards.

It has a few simple ingredients that I play with constantly tweaking this or that using whatever I have on hand.

This recipe started out in life as banana oat cookies and looked like this:

2-3 ripe bananas (OR 1 can pumpkin pie mix)

2-3 tablespoons ground flax seeds (I use a coffee grinder)

1 large dollop of organic plain peanut butter (no added sugar or oils)

Hand full of raisins

Handful of cocoa chips (I like to use the dark/semi-sweet ones)

2-3 walnuts chopped fine

Teaspoon of vanilla or ½ shot of rum (optional)

Quick oats (organic of course) to desired consistency.

If the mixture is too runny add more oats.  If it is too crumbly then too much oats have been added, try adding some applesauce.  Ideally the mixture is moist and sticky.

Mix up everything but the oats first it will make your life easier. Another tip for ease of cleanup is to use certified parchment paper on top of your cookie sheet. The cookies don’t stick and the paper just gets tossed when you’re done.

Oven preheated to 350 degrees.  Bake until lightly brown on the outside.

You can either make bars or make cookies.

All of these ingredients can be played with to suite to taste.  I had a buddy of mine add a lot more peanut butter and the results where great!
